Dataset description

As part of the project Use of Fruit Gene Resources (NUVOG II, PGREL-NN-0054), 40 varieties were tested for their suitability for the production of noble spirits. 25 kg of fully mature fruits were processed. The most robust varieties were selected. Brix, pH, sugar and foline content were collected in the juice. The products were described in a trained panel (12 people) regarding their intensity, typicity and complexity and were then evaluated by an expert group. The experiment showed that there is a potential for the old apple varieties.
