Der Bundeslebensmittelschlüssel (BLS) ist die nationale Nährstoffdatenbank Deutschlands. Er dient als Standardinstrument für die Ernährungsforschung, insbesondere zur Auswertung von Verzehrsstudien, und bildet die Datenbasis für Ernährungsberatung sowie die Berechnung der Nährwertkennzeichnung. Version 4.0 wurde grundlegend überarbeitet und enthält 7.140 Lebensmittel mit 138 Nährstoffen. Neben aktuellen Produktgruppen wie Pflanzendrinks und Pseudogetreide wurde auch die Nährstoffauswahl erweitert – darunter neue Vitaminformen, Ballaststofffraktionen und das Spurenelement Molybdän. Ein zentrales Qualitätsmerkmal ist die umfassende Datentransparenz: Jeder Nährstoffwert ist mit seiner Herkunft dokumentiert und einer von insgesamt 13 Herkunftsarten (wie Laboranalyse, Rezeptberechnung oder Literaturwert) zugeordnet.
